Guilt Free Choc Brownie Recipe….

Since I posted some photos a while back of the virtually guilt free Chocolate Brownies on Marley & Lockyer “Luda” plates, there was a huge amount of you wanting the recipe…and rightly so – virtually guilt free -hello! I give this recipe to my Bootcampers to help them on their weight loss journeys and I haven’t heard a bad word yet…I am eating one right now!

VIRTUALLY GUILT FREE CHOC BROWNIES

¾ cup plain flour (you can subsitute for other flours to- rice/wholemeal etc)
¾ cup self-raising flour
2/3 cup Cocoa (raw cacao works too)
1 cup caster sugar or Stevia
200 g natural yoghurt
¼ cup light olive oil or walnut oil
4 egg whites
2 teaspoons vanilla extract
icing sugar, to dust (optional)

Preheat oven to moderate (180°C or 350°C).  Line a 30 x 20 cm shallow baking pan with baking paper.  Sift flours and cocoa into a large bowl.  Stir in sugar/stevia and make a well in the centre.  Whisk yoghurt, oil, egg whites and vanilla together in a small bowl.  Pour onto dry ingredients, and mix lightly and quickly until just combined.  Spread into prepared pan and smooth the surface.  Bake for 30 minutes or until a skewer inserted into the centre of the tray comes out clean.  Take out of tray and leave baking paper on for 15 minutes. Cut into 24 squares.  Dust lightly with icing sugar before serving (optional).

This only has 141cals per serve, 23g Carbs, 3g protein and 4g fat….per serve – hello….guilt free! Oh, and it freezes for lunchboxes too.
