Cinnamon Bread

Today I woke, after a long lie in, with a need to bake something…not sure what, just something. I checked through my recipes to find something, but gave up and made up this instead. I’ve called it “Cinnamon Scroll Bread”….it’s very, very good.

I had a packet of Laucke Breads Pizza and Focaccia mix in the cupboard…and I swear by this Australian flour makers products and mentioned them in a recipe I made here before.

If you do use the mix, I make it as though I am doing bread and let it rise for a half hour or so. All you do is empty the flour mix and yeast into a bowl and add 330mls of luke warm water and either knead it or use a dough hook on your mixer…I took the easy way and used a hook.

once you have let the mix rise, melt about 80 grams of butter until it’s just on the verge of runny and mix with 2 tablespoons of brown sugar and a heaped teaspoon of cinnamon and mix until the sugar starts to dissolve.

Roll/flatten out the dough on a lightly floured bench until its about 30cms long and about 25cms wide and pour the butter/sugar/cinnamon mix (leaving about a 1/4 aside) over the top and spread all over. Then roll one end over like a Swiss roll until you have a log…give it a twist and put it into an oiled loaf tin (I always use ceramic ones), brush a little of the sugar/butter mix on the top, and put into a pre heated 180C oven for about 20-30 minutes. Half way through the cooking, put some more of the butter mix on top and finish baking until it starts to turn golden.

Once it’s done, remove from the oven and put any leftover butter mix on top. Now this bun is meant to be moist and sticky from the butter/sugar mix, so don’t worry if when you cut it, it looks doughy…it should only be here and there.

Trust me …it won’t last long with a cup of tea and some sun on the veranda!
