These would have to be some of the easiest muffins I make here on the farm. Sometimes I’ll be making a batch while everyone is getting ready in the mornings. They are quick enough that you can make them when you know someone is on their way over for a cup of tea too!
They are super easy to make, and I’ve been playing around with other versions too by adding sultanas, or cranberries alongside the apples.

APPLE AND OAT MUFFINS
Ingredients-
1 1/4 cups of self raising flour
2 tablespoons of caster sugar (I use a bit less)
1/3 cup vegetable oil
2 eggs
1/2 cup milk
1 cup of apple purée
1 teaspoon of cinnamon
2 small apples (cored, peeled and chopped)
3/4 cup of oats
METHOD-
Preheat oven to 180c
Put all ingredients into a mixing bowl, except flour and whisk until combined.
Add flour and fold through until JUST combined.
Divide mixture evenly into 12 muffin cases and sprinkle tops with oats.
Bake for about 25 mins until cooked through. Cool on a wire rack.

That’s it! SO easy, and you can freeze them to add to school or work lunchboxes too.
