Over the weekend I made a batch of these Honey Oatmeal cookies and they are so good, I made a double batch today. Now, they started off as something different, but as I always seem to do, tweaked it a little a lot
Honey Oatmeal Cookies
1 cup plain flour
1 cup rolled oats
1/2 teaspoon baking powder
2 tablespoons brown sugar
100g organic butter
1/4 cup honey
rind of lemon (about a teaspoon)
1 egg
1/2 teaspoon vanilla extract
5-6 finely chopped Apricots
Preheat oven to 175C (350F). Mix together all of the dry ingredients and on the stove, or microwave, melt the butter and honey together and let it cool down a little. Add the egg and mix quickly with the butter then add to the dry ingredients. Add vanilla and mix it all up. Take two spoons and place balls of mixture on a lined baking tray. Place in oven for about 15-20 minutes until golden on top. These freeze really well too.
